Kayaking...
We borrowed a kayak from a friend of Steve's to take with us on our trip. It was a lot of fun. The girl's loved it too. Here are some pictures: (I actually went out on the kayak too- but there aren't pictures to prove it.)

Sounds like you had such a great trip! Isn't it amazing how dirty kids get camping, and yet we STILL think its fun?!
